Simple and quick to make. Delicious and loaded with apples, this is a cake that will vanish in no time. Learnt it from my niece Stuti in Delhi who has mastered baking during the lockdown and whips up amazing cakes.

  • Peel and chop an apple and add it to a pan with half a cup of water. Simmer covered for about ten minutes till it is cooked and the water has evaporated. Mash and set aside to cool.

  • In a bowl, combine the dry ingredients (both the flours, sugar, baking powder, and cinnamon powder).

  • In a separate bowl, combine and mix the wet ingredients (oil, milk, vanilla, and the mashed apple).

  • Combine the dry and wet ingredients and mix thoroughly with hand. Add this thick batter to a greased and lined baking tin.

  • Peel and thinly slice the other two apples. Arrange them on top of the batter. Sprinkle a mix of 2 tbsp powdered sugar and 1 tsp cinnamon powder on the apple layer.

  • Bake at 190°C for 40–50 minutes or until a toothpick inserted comes out clean. Let it cool. Devour!

Storage Instructions

Refrigerate leftovers

Special Care

  • Make sure the mashed apple is cooled completely before adding it to the oil-milk mix.

  • Don’t slice the apples (for topping) too much in advance lest they oxidise.
