Simple and quick to make. Delicious and loaded with apples, this is a cake that will vanish in no time. Learnt it from my niece Stuti in Delhi who has mastered baking during the lockdown and whips up amazing cakes.
Peel and chop an apple and add it to a pan with half a cup of water. Simmer covered for about ten minutes till it is cooked and the water has evaporated. Mash and set aside to cool.
In a bowl, combine the dry ingredients (both the flours, sugar, baking powder, and cinnamon powder).
In a separate bowl, combine and mix the wet ingredients (oil, milk, vanilla, and the mashed apple).
Combine the dry and wet ingredients and mix thoroughly with hand. Add this thick batter to a greased and lined baking tin.
Peel and thinly slice the other two apples. Arrange them on top of the batter. Sprinkle a mix of 2 tbsp powdered sugar and 1 tsp cinnamon powder on the apple layer.
Bake at 190°C for 40–50 minutes or until a toothpick inserted comes out clean. Let it cool. Devour!
Refrigerate leftovers
Make sure the mashed apple is cooled completely before adding it to the oil-milk mix.
Don’t slice the apples (for topping) too much in advance lest they oxidise.
