This is a one pot meal that used to be a family favourite when we were living in the US, and my daughter was young, which necessarily meant that I had no time for anything. So one-pot meals that could be cooked in 15-20 minutes, were a life-saver. This was something that was taught to me by my American neighbour and in its original version I used the crushed-up sausage meats that were available in the US.
Cook the rice separately using a 1:2 ratio of uncooked rice to water. Set aside.
Cook chicken mince in oil. When almost done, add green chillies and peppercorns. Then, add the green capsicum. Saute for 2 minutes.
Fold the cooked rice into the cooked mince and peppers.
Add the soy sauce in 1 tbsp increments to taste and till the rice takes on the colour of the soy sauce.
