A sweet & sour ripe mango curry with coconut
1. Cook the mangoes with turmeric, red chilli powder and salt. Be careful to not overcook them.
2. Grind the grated coconut with red chilies and cumin seeds.
3. Mix this into the cooked mango with a little water and boil water for a minute.
4. Reduce the flame to a simmer.
5. Mix the beaten curd into the curry stirring all the time without bringing to a boil. Remove from fire.
6. Tadka - In a little oil splutter mustard seeds, curry leaves, fenugreek seeds and dry red chillis. Season curry with this.
7. Serve warm with steamed rice. Serves 3-4 people.
