Sometimes things just come together! “A li’l bit of this , a li’l bit of that … what shall we put in next”: that’s how a song in a kids’ show went, teaching them to bake a cake. This one is not a cake but the same principle applies.
Peel and grate the raw mango.
Roast the peanuts and cool. Pound them coarsely so they retain a bite.
Chop the mint finely.
Toss everything together and serve, garnished with a sprig of mint.
The amount of sugar used will depend on the sourness of the raw mango. I used totapuri mango which is not very sour.
The salad can be served on a bed of lettuce for added colour.
