This is a recipe that I learnt from my local guardian when I was 21 and studying at LSR. I have made this recipe over a hundred times now and it never goes wrong.
Take extra ripe bananas and mash them. Put maida in a bowl and add sugar, bananas, eggs, powders, and lastly the oil. Add lukewarm milk in case the batter is thick.
Mix all the ingredients and let the dough rise for 2 hours at least (in winter, keep it overnight).
Fold in walnuts.
Bake at 200°C for 35 minutes or until done.
Refrigerate leftovers
Ensure that the bananas are over-ripe.
Add lukewarm milk if milk is required for adjusting the consistency of the batter.
Resting is a trick. Try it.
