Chef's Recipes
Ingredients
- 2 mangoes green raw (non-fibrous variety, tota puri is fine)
- ¼ tsp turmeric
- 1 tbsp red chili powder
- salt to taste
- 3 tbsp Sesame oil
- ½ tsp mustard seeds
- ¼ tsp asafetida hing
- ¼ tsp fenugreek seeds methi
- 2-3 kashmiri/bydagi chillies
Manga Curry
An instant raw mango pickle
Ingredients
- ½ cup black-eyed peas (lobhia - preferably the smaller redder variety - soak overnight in water over or 3-4 hours)
- ½ kilo ripe pumpkin – sliced into thin squares (some like a mix of white and yellow pumpkins)
- 2 green chillies
- 150 ml coconut milk
- salt to taste
- 1 bunch curry leaves
- 1 tbsp coconut oil
Olan
A subtly flavoured pumpkin & black-eyed peas curry simmered in coconut milk
Ingredients
- 5 or 6 small sized ripe mangoes (cut into large slices, keep the seed)
- ½ tsp turmeric powder
- ½ tsp red chilli powder
- salt to taste
- 1 cup coconut (grated or cut into very small pieces)
- 1 tsp cumin seeds
- ½ cup curd, beaten smooth
- 1 tsp coconut oil
- ½ tsp fenugreek seeds
- ½ tsp mustard seeds
- 4 dry red chillis.
- 1 sprig curry leaves
Mango Puliserry
A sweet & sour ripe mango curry with coconut
Ingredients
- 500g - green banana/ yam/ raw jackfruit (any one may be used)
- ½ tsp turmeric
- ½ tsp red chilli powder
- salt to taste
- ½ cup coarsely grated coconut
- ½ tsp cumin seeds
- 1 tbsp coconut oil
- 2 tbsp coarsely grated coconut
- 1 bunch curry leaves
- 1 tsp pepper powder
Eriserry
A side-dish with not-your-regular vegetables, coconut paste and a dash of black pepper
Ingredients
- Parwal: 500 gm (12-14)
- Oil: 2 tbsp
- Asafoetida: 1 pinch
- Cumin seeds: ½ tsp
- Green chilly (finely chopped): 1-2
- Turmeric powder: ½ tsp
- Coriander powder: 1 tsp
- Fennel powder: 2 tsp
- Red chilly powder: ¼ tsp
- Mango powder: ½ tsp (or juice of half a lemon)
- Garam masala: ¼ tsp
- Besan (gram flour): 1 tsp
- Coriander (finely chopped): 1 tbsp
- Salt: as per taste

- Chicken (thighs and legs): 1 kg
- Onion (cut into thin circles): 1 (medium)
