  • On a medium flame, dry roast red lobia (use a hot pan or skillet). Occasionally stir so that it doesn't burn. Takes about 10 to 12 minutes. Once it cools, you should be able to munch it like a snack.

  • Grind the roasted lobia, garlic cloves, green chilly, a little salt, and coriander leaves (optional) together in a grinder.

  • Add water slowly to the powder to get a thick chutney-like consistency. Run the grinder again so it emulsifies well. Add salt/rock salt to taste. Take it out in a bowl.

  • Add a dash of lime for some sourness/flavour (as per your preference). Mix well. Serve with your favourite meal as a condiment/side dish.
