Mix all the vegetables and add the atta, salt, and water to make a thick paste.
Heat a heavy-bottomed cast iron or non-stick griddle. Add 2 teaspoons of oil. Pour the mixture and cook for 10 minutes on each side on a low to medium flame. (This is cooked uncovered at all times.)
Mix all ingredients for the sauce. Serve with the pancake.

* Mixed vegetables generally used are cabbage, onion, spring onion, green chillies, sweet potato, and carrot.
Traditionally made with maida, I use only atta.
Remember to cook on a low flame.
